In Southern California, there are not many opportunities for experienced professionals to work in a large, distinguished ministry.  The Orange County Rescue Mission has been serving the Least, the Last, and the Lost in our community for over 50 years. The Orange County Rescue Mission and Restoration Roasters is seeking an experienced an experienced Coffee Roaster to fill a part time vacancy.  This position serves as the in-house coffee expert and resource for managing the roasting process and schedule.  Our roasting schedule is currently Tuesday & Thursday for 8 hours each day but has the possibility for adjustment, please ask.  The head coffee roaster will work with the C.O.O. or Operations Team in roasting experiments, improving inventory accuracy and forecasting, along with consistent roasting profiles.  This position will manage inventory levels for both green and roasted coffee. The position will also train staff, volunteers and mentor students on production operations, including roasting, stamping, head sealing, weighing and shipping.  Please visit the Restoration Roasters website for information on the brand www.restorationroasters.com .

Job Duties:

Production and Management (Quality of coffee and service)

  1. Coffee sampling
    1. Intake of coffee samples from importers to determine coffee to be used for production. Identifying quality coffees within program budget. Sample roasting to identify specific characteristics
  2. Coffee profiling
    1. Once the certain coffee is selected, roasting the bean to identify the “profile” or recipe for how that bean should be roasted daily. (light medium dark etc) then ensuring the coffee is continued to match with the determined profile
  3. Coffee cupping protocol
    1. Quality control and sensory development through coffee analyzing and cupping. Ensuring that the team is weekly tasting and analyzing quality and development of the coffee
  4. Inventory Management
    1. Upkeep of necessary resources
      1. Green coffee, 5 lb bags, labels, retail bags etc
    2. Production Roasting (if needed)
      1. Fill in the necessary gaps to complete needed roasted coffee for day/week
    3. Maintenance
      1. Monthly roaster cleaning/repairs
        1. Cleaning exhaust ducts
        2. Lubrication of drum bearings, deep cleaning of chaff collector, etc
      2. Ensure cleanliness of roasting area
        1. Deep cleaning of surrounding roast area
      3. Training (onboarding, production theories, coffee knowledge for new roasters)
        1. Creating and instructing the following roasting curriculum for new roaster students
      4. Mechanical– what is a coffee roaster, how does it work?
        1. Breaking down the mechanics, elements and functions of the roaster
      5. Technical– the science of roasting: how to theoretically roast coffee
        1. Learning the applied roasting theories, verbiage and concepts to adequately navigate and communicate roasting process
          1. Charge temp, charge size, turn around point, yellow phase, first crack, development time and cooling.
        2. Sensory– the art of roasting: how to craft the perfect roast based upon senses
          1. Developing necessary senses of new roasters for roasting properly.
            1. Smell, sights, hearing etc
          2. General coffee education– how to work with importers, how to properly brew various methods, the history and context to coffee (types of coffee, knowledge of coffee processing etc)
            1. Knowledge base– coffee processing, coffee families and regions, tasting notes and aromas, importing etiquette, pricing coffees retail/wholesale
            2. Applied– brewing methods: espresso, batch brew, pour over, cold brew, maintenance etc
          3. External Partnerships (church relations, wholesale partners, outside volunteers)
            1. Developing dynamic relationships with OCRM partners (importers, volunteer bases, etc)
            2. Wholesale account manager and sales
These duties are not exclusive and with consideration of the job requirements and employee skills, this job description can be added to or taken away from at the discretion of the employee’s immediate supervisor.

MINIMUM REQUIREMENTS:

  • A personal relationship with Jesus, good working knowledge of the Bible, signed acknowledgment of the Statement of Faith.
  • High School Diploma (or equivalent education) and a minimum of 2 years specialty coffee roasting experience.
  • Expert knowledge in the specialty coffee process from bean to brew.
  • Knowledge of basic roasting machine maintenance and cleaning.
  • Ability to physically lift 50lb bags of beans on a regular basis and maneuver in a tight work environment.
  • Be self-motivated, dependable and organized.
  • A professional, but friendly attitude with excellent communication skills (verbal and written) at all times with staff, volunteers and students.
  • Excellent training skills in order to teach/train students, volunteers and staff in the coffee process.
  • The ability to mentor program students in work training using Biblical reference.
  • Basic computer skills and knowledge in Microsoft Office (Outlook, Word, Excel).
  • The ability to act professionally and think promptly in an emergency or crisis situation.
  • Ability to recognize and maintain confidentiality of information as appropriate.
  • Maintain and have acceptable driving record with 2 or less points (as deemed by our Insurance Provider).
  • Regular timely attendance.
